Billie Joe Armstrong did, technically not Greenday. Was one of his #nofunmonday covers during lockdown. Played it on one of the late night talk shows with his kids.
Some of my favorites:
Clapton's Stormy Monday: https://www.youtube.com/watch?v=X5IdtqFf95g
Alman Brothers: Stormy Monday: https://www.youtube.com/watch?v=Bqa1s4jhkQ8
Freddie King: Have you Ever Loved a Woman:

Wow, 2 pages and no one has mentioned Disturb's cover of Simon and Garfunkle's "Sound of Silence"?
This was done live on Conan while the lead singer was sick...still that good. Better than the original.

I also liked Bad Wolves cover of Cranberry's "Zombie"

Everybody Knows - Concrete Blonde
Foo Fighters' cover of "Baker Street" is very cool. Not a copy of the original and they didn't even mess with having a sax. It's their own interpretation and it is great. Not better or worse than the original. Just a cool job of covering a very difficult song to cover.
Not bad for a bunch of kids.
I thought this was a hell of a cover
Technically a cover of an Dylan song that Darius Rucker covered later
I remember a buddy of mine years ago playing The Stranglers songs for me, which I hated - until he played their cover of "Walk On By". Far out, man.

Fine. Be that way:
And even better (I think this is technically a cover, yes, officially)
I enjoyed the entire Led Zeppelin encomium album but this is my favorite.

My parents saw him at the Schott a number of years ago. During one of his performances, a blue collar guy who was probably in his 60s and was sitting in front of my parents, got taken away by the beauty of the music. He turned to his wife and he had tears in his eyes. He said pretty loudly to her, "goddamn, that d**go can sing!"

I'm not actually an opera fan....Not ashamed to admit there are a few Popera tunes I like.
Truly have to listen to this to believe it....have to listen to at least the second verse...this is real, saw him do it live too.

Seen that one before, but Marcelito did both the female and male parts...by himself.
