I’m at in-laws so I’ll def keep that in mind…. As far as the recipe it’s sooo easy… put in oven at 500 or 525 for 5 min per pound. This was 10.34 pounds so I did 52 min at 525 and then just turn off oven and turn off the oven for 2 hours. Literally it. Obviously season it with salt uncovered in fridge and then liberally rub with irish butter thyme and rosemary. Fool proof can’t really mess it up

This is a peach pie (one of five various pies I made from scratch) that I'm very proud of. The crust browned perfectly and fairly evenly!
