If it's a sweet potato, I'd rather them be fries.

I might give this a shot.  My wife and I have been including more sweet potatoes into our diet.  She is not a big fan of them.  She does like them with pineapple and ham.  She is not a big fan of the sweet flavor.

Mashed red skin potatoes with the peelings on fresh garlic, chives, sour cream and cheddar cheese are great with grilled tuna steaks or ribs.

My personal favorite is mashed with sour cream and chives topped with sour kraut and pork.  I can eat this stuff until I am bloated and can do nothing more than lie on the couch like a beached whale.  My wife does not like even the smell of kraut.  I have to make gravy especially for her..  The leftovers are all mine and its well worth the havoc it wreaks on my bowels the next few days.

Cut potatoe in cubes, coat with olive oil and onion soup mix, bake in the oven until tender.  Just can't beat it.  So good.
