Last year I seasoned and seared a pork loin then put it in the crock pot for 6 hours. It turned out decent, but could have been better. I will probably do something similar this year. What do you do?

Brine overnight. Add rub or just salt & pepper. Put it on a roasting pan with apple juice in the bottom and cover. Cook on 350 for about 35min/lb.

Salt and pepper roast
sear on all sides
cover bottom of crock pot with kraut and sliced apples
put roast on top
make applesauce and brown sugar glaze and coat roast
cover with kraut
cook for 6-8 hours

NYD is the best day of the year for eating. Barbq spare ribs, mashed taters, saurkraut with a hint of sausage.

I do mine a little differently.
Dry rub pork tenderloin with a mixture of salt and brown sugar place in fridge for 24 hours.
Mix Kraut, apple slices, brown sugar, and caraway seeds place in roasting pan (I use an old granite roasting pan if you know what those are.)
Place pork in pan and cover with kraut mixture, bake in over at 200 degrees for around 12 hours.
The acidity in the kraut breaks down the pork until it literally falls apart.
On a side note, if you live near a Buehler's Supermarket, they have a special this week on their pork loins, buy one get one free. I bought two really nice pork tenderloins and spend just over $20. It is a great deal if you can get to one of their stores.
