I am cooking dinner tonight for my girl....for the second time this week. yes i am trying to get out of trouble for getting caught lying....

so I was thinking of making filet mingon(sp?). I know i could google this or you tube it but i was wondering how the OC people do it? or does anyone else have another suggestion for a good dish. i wanna do a soup/salad a main entree and a side dish plus a dessert. looking for things that dont require a ton of ingredients. thanks in advance.

Fliet, depends on how thick. I would heavily salt (Kosher) and pepper(Fresh cracked). If it is an inch to 1.5 inches thick, preheat your broiler(hope its gas, but electric will work) and Stick that puppy 3-4 or so inches away. Cook 3 minutes flip cook 3 minutes, take out and cover with foil, let rest for 5. Should be a medium or medium rare. For more medium rare to rare go about 2.75 or 2.5 minutes on each side.

Edit: If you want to do it like the fancy pants restraunts make a nice flavored butter (use real butter) and put it a ton on top after you take it out and let it melt while it is resting covered.

thanks....that is kinda what i planned i didnt know if i should put them in a pan first w/butter....obviously this is very delicate to the timing i just have never done it before....i did NY Strips the other night and broiled them pretty well....one(that i gave to her) was perfect ....the other slighlty over done with not much pink....i really wanna do steaks because they dont require a lot of prep and cook quickly. and there has been some good sales on steaks lately.

Put the fillets under your broiler set on high for about 4 minutes per side. Use the middle overn rack, and spray a pan with some none stop cooking spray. Once they hace cooked pour some melted butter (real butter) over them, plate and serve.

Grab a couple of big baker potatoes and make them ahead of time.

Buy a bag of the microwaveable vegatables. The kind that steam inside the bag. Those are usually the freshest vegatables you can buy with little prep time.

For dessert, pick up something at the bakery. She knows you probably can't bake but will appreciate the effort.

Here's how I like mine. I like to season it with this seasoning mix:
mix in a bowl:
2 tsp of kosher salt
2 tsp freshly ground black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp paprika

Season both sides liberally and cook do your likeness. I like mine medium rare, and depending on thickness could take 7 - 10 per side on very high heat.

Now when your steaks are done let them rest, but while they rest it's great to add a little flavor to them by adding what I've always heard called "hotel butter" .
To make this mix:
4 tbsp butter (room temperature)
1 tbsp freshly chopped Italian parsley
1 clove garlic, crushed fine,
salt & pepper to taste (usually don't need this because of the seasoning added to the stake)
Roll butter mixture with saran wrap, in the shape of a tube and freeze until the steaks are done.
once the steaks are done, slice a piece off for each steak and place on the steaks while they rest. (make sure to cover the steaks while they "rest")

Hope this helps or gives you an idea.

One big key, that I've noticed not alot of people do, is to make sure the meat is at room temp when you cook it. Cold meat and hot oven shocks the meat, and it won't be as tender as it should be. Granted it's still good if you don't do it, but could be better. Also, like someone mentioned, herb butter is very easy to make and will probably impress the lady.

This is the herb butter recipe I found that I like the best.

2 cups butter, softened
1/4 cup minced fresh parsley
2 tablespoons minced garlic cloves
4 teaspoons Italian seasoning
1 teaspoon crushed red pepper flakes
PS. You can also use that to make some Italian Herb Bread to go w/ the meal. Just spread on some French bread and stick it under the broiler for a couple minutes.

Not a fan of filet but steak sounds delicious. I like mine with salt and Spicy Montreal seasoning...but just salt and pepper is good, too. Love baked taters with butter or roasted redskins which are also easy to make. Just cut them up, drizzle with olive oil, salt and pepper and roast on 425ish til they are golden. There are definitely some good desserts in the bakeries at Giant Eagle and Kroger. If you get some kind of cake or brownie you can also get ice cream to go along.

Now I'm starving.

This is very important. Take out at least 30 min ahead of time.

My rub if you don't want just salt and pepper is below. It is awesome. Put it on right before you put into broiler. Never want to salt too early.

1 tsp ground mustard
1/2 tsp garlic powder
3/4 tsp kosher salt
1/2 tsp fresh ground pepper
1/4 tsp rosemerry (make sure you crush it)

To heavy of a dish ...(you do plan on have sex after the meal ?) you think it a great dish because it cost a lot and its beef but does she?
Simple but good, without potential failure...

I first suggest a nice salad: Something different: Fattoush salad … simple and easy but does take a effort.

Second: I would suggest a dish that needs to be baked (this shows that you have done some planning ..girl like planning) plus you don have to do anything until it time to serve the dish.
I suggest: Cheesy Chicken & Rice Casserole
This one-dish wonder features moist, tender chicken breasts covered with melted Cheddar cheese, sitting on a bed of creamy rice and vegetables - it just doesn't get any better!

1 can (10 3/4 ounces) Campbell's® Condensed Cream of Chicken Soup (Regular, 98% Fat Free or Healthy Request®)
1 1/3 cups water
3/4 cup uncooked regular long-grain white rice
1/2 teaspoon onion powder
1/4 teaspoon ground black pepper
2 cups frozen mixed vegetables
4 skinless, boneless chicken breast halves (about 1 pound)
1/2 cup shredded Cheddar cheese
• Heat the oven to 375°F. Stir the soup, water, rice, onion powder, black pepper and vegetables in a 2-quart shallow baking dish.
• Top with the chicken. Cover the baking dish.
• Bake for 50 minutes or until the chicken is cooked through and the rice is tender. Top with the cheese. Let the casserole stand for 10 minutes. Stir the rice before serving.
RECIPE TIPS
• Alfredo: Substitute broccoli flowerets for the vegetables and substitute 1/4 cup grated Parmesan for the Cheddar cheese. Add 2 tablespoons Parmesan cheese with the soup. Sprinkle the chicken with the remaining Parmesan cheese.
• Lower Fat: Use Campbell's® 98% Fat Free Cream of Chicken Soup instead of regular soup and use low fat cheese instead of regular cheese.
• Mexican: In place of the onion powder and black pepper use 1 teaspoon chili powder. Substitute Mexican cheese blend for the Cheddar.
• Italian: In place of the onion powder and black pepper use 1 teaspoon Italian seasoning, crushed. Substitute 1/3 cup shredded Parmesan for the Cheddar.

I’m sure you’re not a baker so I would suggest as a dessert simple but impressive and very special: Raspberry sorbet ….not ice cream….SORBET

With this meal I would serve a Resseling wine…

A small 6 or 8 oz filet is not too heavy (just don't have any starch), and it will get you laid.

i agree...i am going to probly go with asparagus for a side dish...doesnt seem too heavy...and probably a soup or light salad for appetizer. I also dont think its that expensive really when your just buying two.....I am going with the sorbet idea and maybe i can scrape up some raspberries to put on top...i will make that chicken dish next week tho...i usually make her dinner once a week.

its actually a lie that wont go away....as ive stated on previous threads...before we got together i slept with one of her friends because i really thought she didnt feel the same way i felt about her. but i knew it was shady to sleep with her friend cuz we had been messing around on the weekends and stuff. the friend swore she would never tell. of course a few weeks later the friend said the guilt was too much and she told her unbeknownst to me. i lied about it when she asked and lied right to her face....finally i told the truth. this was over a year ago. well i also lied and said that i used protection.......and last week one of that chicks friends salted me up and told her i didnt.....so i admitted it and she is really mad/hurt....so im on strike two.....

Yeah I was going to say...the lying is the bad part. And I'd say she does need to get over it after this much time but then you got busted for lying again...so she's okay in my book, lol.
