The University of Virginia "Cavalier" (coined CavMan) rides a thoroughbred leading the team onto the field pre-game (and sometimes at half time) - the guy is an alumnus but not a current student. Then again, I agree with you, I'm not sure he's the "mascot", he's just the handler of an animal that could be very, very dangerous if not handled correctly. The "person-in-the-costume" Cavalier is a student.
