I bought two pork bellies and gonna try to make my own bacon. I am using one recipe my grandpa used and remember the bacon seemed to taste great back then. The other just pulled off the interwebz salt pink salt sugar pepper corns thyme bay leaves and several other ingredients I can not remember off the top of my head. I have had them in the salt packs for seven days pulled them out and have em rinsed off and in the smoker. Using some apple wood for these. If they turn out good will try a different wood the next time.

Anyone else ever try to make their own bacon?

My first try at making bacon a success. I am surprised it turned out so good. It needs a few changes taste wise. a few of the ingredients seem to be a little too strong. I think a few less of those ingredients it will be better.

I made a smokehouse this year as well. I used this recipe for my first attempt.

I have heard the molasses is really good. Im gonna have to try that next time. I want to try with some maple syrup too. The sage I put on the one slab was a little strong was the herb that i was talking about will have to cut down on. I am pretty happy with this batch seeing how it was my first time.

A chick im talking to ws cooking me dinner one night. She is from a pretty wealthy family and was trying to give a lesson in fine dining or something lol. Anyways she made me some pasta with pacon (forget what the dish was called). I wasnt aware that storebought bacon was safe to eat straight from the package. So I look at thi bacon that didnt look done, still decdided to try the piece and spit it out right away. Apparantly she only fried it on low for like a minute. Fuck that, the only bacon I eat is crispy. I picked around the bacon the whole dish and she wasnt very happy haha.

Im not sure if store bought stuff is safe to eat right from the package or not. Most of the flavorings they use is in liquid form. I know the stuff like I just done is cooked but not sure if I would eat it raw either. I am with you on this one I like my bacon crispy.

Are you sure it wasn't supposed to be Prosciutto? Maybe she got the two mixed up?

Well apparently if you read the package closely, it is smoked (maybe only a certain brand says that) and is edible.
