This is kind of a generalization, but to me it seems there are the Big Three composers who do the OST to all the big time movies, and then everyone else lies behind them.

By Big Three I mean : John Williams, James Horner, and Hans Zimmer.

It just seems like every really good, big-time movie has music composed by one of those guys.

Then there are really two categories: classical/symphony style soundtracks and compiled soundtracks with non-original songs. Pretty much any good soundtrack (such as Forest Gump) that isn't sypmhonic is not going to be original. I thought it's fairly rare to commission artists to create original songs specifically for a movie and rarer still for that soundtrack to have enough good songs to actually make someone want to buy it, even rare for that movie to be good enough for anyone to care about. Having said that, I believe Enya sang the theme for Gladiator, but was maybe not an original piece (written and performed originally by someone else for a different reason). Just a side note, Pavarotti was supposed to sing that and passed on it, which is a shame because his version (Il Gladiatore) is amazing.

I thought I remember reading, for example, that Nicholson and Henry Fonda came up with a lot of the songs to include in Easy Rider.

I'll also throw out the soundtrack for the movie Once, as it was also quite excellent.

the soundtrack for Judgement Night rules. run dmc/aerosmith have nothing on ONYX/Biohazard. cd changed music big time in the early 90's

Exactly. The Remember the Titans is the first one I thought about. Space Jam is also great and after looking at the other soundtracks in this thread I would agree that it is second.
