If you do it on your grill, use an indirect cooking method (do not place the meat directly over the coals). Like stated above, count on an hour or so per pound, depending upon how often you raise the cover of the grill, and displace the heat.

Oven cooking is another option, as well as a slow cooker or a roaster. Good luck.

Whatever you do, thaw that bad boy out before you cook it. It will make the meat more tender and tasty.

I like to use the chunk wood when smoking with charcoal, they hold heat pretty well after they dry out and stop smoking. I usually go with a base of briquets, a layer of the lump charcoal, and then a couple soaked wood chunks every half hour or so. I like to inject it with Worcestchire, soy sauce, and beer. I use apple juice for the mop.

that looks like it would work very well justin..if you decide to go with gas this is the one i have, it might be cheaper in the long run without buying charcoal all the time and it retails for 159.00
