We've got two briskets in our deep freeze and finally have the opportunity to cook one this weekend. But I have never done a brisket and have no idea which direction I should go with it.

Ideas?

As long as it's good I can go either way. Probably prefer bbq but I wouldn't mind checking out a bunch of different recipes.

I'm not exactly sure what you are looking for but one of the tabs on the site provided is "Recipes".

One of the guys who runs/owns/works in this shop is an old Shaker Heights wrestling coach. I've been to the shop a few times... It's GOOD!!!!!!!!!

From Belly -
Belly Smoker Rub

¼ cup Dark Brown Sugar
1 cup Paprika
½ cup Celery Salt
2 TBsps Granulated Garlic
½ TBsps Mustard Powder
½ TBsps White Pepper
1 tsp Cayenne Pepper
2 tsp Ground Thyme
½ tsp Sea Salt

Mix well
Rub on Butt Roasts or Meat to be Smoked generously, wrap tight in plastic and refrigerate over night.

Mr. Brisket looks fucking awesome. No recipe Justin. Been thinking about doing a brisket myself. Take some pics and let us know how it went.

If you have a smoker, try this site -> http://www.smoker-cooking.com/index.html. Lots of rub, mop, and bbq sauce recipes, and many tips for doing a brisket, ribs, pork butt, etc. right.

I have tried a few of the rubs, and the Dr. Pepper BBQ Sauce recipe is a hit with the family.

Unfortunately no smoker. I do have a charcoal grill and a gas grill.

Beware:</SPAN> Corned Beef Brisket is a brisket that has been corned, which is to say it has been preserved with salt and flavorings. It is not the same! It is meant for simmering in water, not for barbecue. </SPAN>

Tree cuts of brisket, a whole "packer" brisket, a "flat" (sometimes called "first cut"), and a "point" (sometimes called "second cut" or the "deckle"). Each cut needs to be cooked differently.

Another option : I once made a BBQ Beef Brisket in a Slow Cooker (crock pot) and it turned out really good. Lot better that I thought it would. You can find a ton of slow cooker recipes.... </SPAN>

Using Belly BBQ Dipping Sauce sealed the deal however .... </SPAN>

Can I use my charcoal grill to smoke? I've never used a smoker so not sure how that process works.

if you could keep the temp down to 225 degrees or so and use some wood chips in there you could do it and get a similar taste....low and slow is the key. problem is that brisket would take about 1-1.5 hours per pound so depending on how big your talking about 8-9 hours at least so that might represent a real challenge for charcoal. you could probably put it on grill for a hour or two..then do oven wrapped in foil 3-4 hours and then finish 2 hours on grill or something like that.
