I am not strict Paleo either. I was more speaking in terms of cheese is something I have a hard time consuming in proportion.

Mozzarella is dee-lish. Pepperjack is good as well.

Too many cheeses to choose from. The stronger the better. Bleu is awesome but a smoked, dry gouda is great. I've had some french and spanish cheeses that are great. I prefer a cheese that I can smell through the wrapper.

The question is hard to answer because it is related to my mood or what I am eating at the time. It is almost like asking what is you favorite type of woman.
