I think this is the best idea so far. Hopefully you don't sue me when I open this shop in Bexley with a satallite store in New Albany

I'm not sure your competition is legitimate. You can't just donate a portion of your proceeds to charity to become a non-profit, you have to have a reason to be a public charity. I think that would be tough for a freestanding coffee shop.
If they are a non-profit then they must file a tax return(form 990) and make it available to the general public. Ask for it(say you are considering donating to them). Form 990, Schedule A, Part 1 gives the reason. Here is the form itself:
http://www.irs.gov/pub/irs-pdf/f990sa.pdf

There will be a lot of other interesting information on the rest of the form. At least you will know what you are up against.

Will there be a "no shoes, no service" sign on the front door? Might really cut into your Amish trade once April hits.

Take the back alley behind bags 1 block. Its across the street on your right across from the CSB building (the tallest in town).
