Memphis---Dry rub with sauce on the side
Kansas City---Smothered in sauce
Carolina---Vinegar based flavor
Texas---It's about the meat no sauce

For myself I love all of them but am partial to the memphis style because you get the option of sauce or no sauce

Add 2 more to this, as you mention most Carolina BBQ is vinegar based, but (i) there is a strong contingent in South Carolina for the mustard based variety (and it is taken a little too serious there), and (2) there's a healthy amount of ketchup/tomato based BBQ, which is usually what you get in Virginia as well.

Agreed. Top that with a little spicy bbq sauce and a mustard sauce and I am in Heaven.

You are right about the Carolina mustard base (Maurice Bessinger), which still is a vinegar base, but definately a staple to SC. My wife's Aunt lives in Harrisonburg and have had the chance to sample that too, which it images KC style IMO.

I live close to the dividing line between eastern Carolina vinegar base, and western carolina tomato base. Lexington NC is the geographical beginning of the western so I feel lucky to have access to both.

Bullocks BBQ in Durham, recommend it to anyone passing through.



Barbecue Slaw and Hushpuppies are a staple in NC

It wold be either Memphis or Carolina. Probably Memphis with ribs or Carolina with pulled pork.

That pic above looks absolutely amazing.

Just had me some LExington BBQ yesterday, chopped sandwich with the tins slaw like in the picture above on top. Topped with some spicy bbq sauce and Texas Pete...mmmmm. Best BBQ place I've ever been to is called Sweatmans in Holly Hill, SC. Only open on Friday and Saturday, smokes a full Hog at a time, and has a buffet of "pulled" pork, ribs, pig skin, Hash over rice, sweet tea, and a mustard sauce or a red sauce. So good, and in the middle of nowhere. Anthony Bourdain went to it on one of his shows. I recommend it to anyone who is driving down 77 passed Orangeburg. And the best thing about it is the Banana Pudding you can get for dessert. The whole meal is less than $10 a person too.

Kansas City style ribs are my favorite type of BBQ. I love Carolina pulled pork, and for brisket there is no other option but Texas (I've always found it odd to group Texas in with the rest because they do beef BBQ and the other three are pork BBQ). KC Ribs are my favorite overall though.

Carolina BBQ works for me.

There is a guy up in the Canton area that makes the closest thing to it. He catered a party for us once and everybody raved about it. He picked up alot of new clients that day.

for sure carolina pulled pork with the HUSH PUPPIES!!!...my mom grew up in greensboro, NC and we drive through there ever year on our way to Hilton Head. Always stop at her favorite restaurant, Stameys...best bbq and puppies ive ever had...i know theres someone on Freehuddle from greensboro, can you confirm this??
