My wife loved the Dominican Republic. We stayed at Dreams in La Romana and it was a really nice all inclusive. My favorite place we have went has been Punta Mita Mexico. We stayed in the four seasons but the best part was the actual town of Punta Mita. I had the best seafood I've ever had there and still think about it 7 years later. We have also down Vegas, Nashville, and Hilton Head. They were all great but it's hard to compete with leaving the country.

Our next trip will either be Vegas, Jamiaca, or an Alaskan Cruise. It's my choice so I need to make a choice soon.

Sometimes you can find decent all inclusive deals out of Pit with vacations express. Punta Cana is decent and the prices are right if you upgrade to adults only.
Charleston is nice, could golf while she shops. Haven't been to much of California but Napa area sounds cool. Niagara Falls is a decent shot trip, they have a bunch of wineries too, and is driving distance but not a week worthy.

I found this house on AirBnB.com for $1800 in Hudson, OH sometime in the summer. Must be a happening place, you should check it out.
