I eat a lot more fish and chicken than I do beef but when I occasionally have a steak I will ask for it to be prepared medium/well.

Was taught if you order rare you are assured a Primary cut. If you order well done cooks can reheat a sent back portion or a will use yesterday's cut or one that just isn't as fresh. Burning the hell out of it masks a multitude of sins.
Never would one of my cooks use a sent back steak or a reheat. Most restaurants these days use precut steaks that are individually cryovaced and open them to order. This cuts down on waste and somewhat ensures freshness. It cuts down on labor and having a knowledgeable meat cutter on premise. I cut my own steaks.
Steak selection is where it's at. You have to train your cooks to recognize what they are looking for, for example, where in the primal cut the steak is coming from vs how it's ordered. It makes a huge difference in the dining experience. I've been cutting steaks for 34 years, I started out when I was a kid.
