Based on that diagram, I get mine Rare. I've always called that Medium Rare, though. I like Dennis Leary's suggestion: Just bring the cow to my table. I'll cut off what I want and ride the rest home.

As for those sickos wanting well done.... why not put some steak sauce on an old shoe. About the same consistency.

Medium Rare at the most. If I want beef jerky, I'll ask for it. :)

Ask any of your restaurant friends about what "save it for well done" means.

I get mine med rare. I have to have a warm center and a true rare has a bright red cool center.

depends. if i cook it and i know that the beef is good, i'll cook it mid rare-rare. If i'm at a restaurant like applebees or outback medium. if i'm at a Ruth's Chris or longhorn (some place that has better than average beef), i go mid rare again.

Actually the way they feed the pigs now in commercial farms almost eliminates the chance for trichinosis.

There was just a report (I think in the WSJ) about this, and how the FDA has recently revised it guidelines. You don't need to cook pork like you used to.

Medium Rare to rare. At home, Ill throw on crushed red pepper and some salt/ground pepper. Will put some Garlic Expressions (Italian Vinaigrette, essentially) while cooking, but wont marinate it.

At restaurant. I ask for Rare, because then I get Medium Rare if Im lucky, and usually medium. Ill put my own salt and pepper on it, and usually the restaurants chefs have good spices and such that they cook with, so I usually just trust them.

Just slightly medium rare. I don't understand why anyone would want a steak well done. Just eat a burger instead of wasting a good cut of meat.

Rare

The phrase, walk it by the fire on the way to my table has been used.

Was taught if you order rare you are assured a Primary cut. If you order well done cooks can reheat a sent back portion or a will use yesterday's cut or one that just isn't as fresh. Burning the hell out of it masks a multitude of sins.
