I know we have a few meat connoisseurs on here.

I just upgraded my grill last night from a cheapo gas to a Weber, and want to start grilling more often. Admittedly, I’ve always just gone to the grocery store and bought steaks and seasoned the shit out of them and grilled them.
Obviously going to a butcher and getting a better cut and quality of steak will taste better and that’s what I plan on doing.

My question is, what’s the best way to prepare a steak? Do you still use seasoning or marinades? Do you just grill the steak how it is?

I’d like your input.

Always been told you should let them sit out at room temperature for awhile. Here's some more info...

I use a dry rub. Just make sure you get them out at least 45 minutes before you grill to come to room temperature. Marinades are sin if you have good steak. Kosher salt and pepper should be just fine for a high quality cut.

My dry rub. Good for 2 steaks.

1 tsp Dry ground mustard
3/4 tsp Kosher Salt
1/2 tsp Fresh ground pepper
1/2 tsp Garlic powder
1/4 tsp dried rosemary (don't forget to crack the rosemary)

Mix it all together then sprinkle and pat down or rub onto steaks right before you grill.

Also if you want to do it like a steak house put a pad of butter on top while it rests.

As far as cooking goes, I grill on a medium high heat for 3 minutes a side and cover it to rest for 5 minutes. Depending on the thickness you may want to do 2.5 minutes a side.

Definitely let them get to room temp first. Hot grill + cold steak = tougher meat. Season w/ sea salt and fresh cracked pepper. Preheat grill to 500 degrees. For 1inch cut, cook 2.5 minutes, rotate .25 degrees(for grill marks) cook another 2.5 min. Flip and do the same on the other side. Should give you a good med rare steak.

You can do that and I appreciate the humor but it's a well known FACT that men are the grillmasters and make a better steak. Some things are just better done yourself!

I know, I just had to throw that in for Zwick.

But, seriously, the wife prepares the steak, and I grill them. That is about the extent of any food making for me.

I dont/cant cook to save my life!!!

I prefer mine with a little olive oil, spicy Montreal steak seasoning and sea salt. We let them come to room temp and then cook them on the grill. Sadly my stepdad sucks at grilling a steak and it's either overcooked or raw but when wildcats, my sister or I make them they turn out well.

Oh and the butcher is the way to go. We have a meat market down the road and their stuff is amazing.

Get a good grade steak and then simply rub it with some Lea & Perrins Worcestershire sauce!!!!

5 minutes on each side seems along time for a med. rare steak isn't it?

I agree I usually do a 3 minute first side and 2.5 second side for mid rare. Or 2.5, 2.5. If you have it on the grill for 10 minutes you are either cooking the shit out of it or not getting a good sear.

I'm more of a medium well guy, so I cook mine a little longer than most of these guys, but here are my tips:

Let steak come to room temperature
Rub with seasonings of choice.....
I'm not big on marinades for steak, however Vodka makes a great one.

Not sure what kind of steaks everyone gets here but if you have to put something on it other then salt and pepper you better look for a different butcher. I like my steaks about two inches takes a little longer to get to medium then 2 minutes usually about 4-5 per side. I put a pat of butter on when done perfect steak for me. I will also let mine sit in the fridge for a few days to get some dry aging on it. The flavor intensifies and makes for a more tender steak.

I don't have to put anything on it...I just prefer to. I like the flavor from the seasoning and I can still taste the flavor from the steak itself. I think we all know that everyone has a personal preference when it comes to food. When it comes to technique there are right and wrong ways to make something but if you like the way something tastes I say go for it.

Take out and let sit til room temperature. I season with only garlic salt, pepper, salt, and peppercorns. No marinade, let the juices take care of that. Depending on how thick the cut is, 3-4 minutes a side. ONLY flip one time. After grilling, let sit for about 4-6 minutes and it will continue to cook itself. Do not cut open right when you take it off the grill.

Pretty much a bit of what everyone else said --

-sit steaks out to get close to room temp.
-salt and pepper, sometimes garlic salt
-get the grill really hot
-about 3 minutes on both sides (minute and a half, then rotate, same on other side if you want the grill marks, I personally don't always do this, I just want it to taste good).
-leave steak sit for 5 minutes after removing from grill
-enjoy (and keep that A1 shit away from it)
