I just put cold water in a tub, put the fermenter in the tub, and then wrapped it with a towel. Checked the temp this morning and it knocked it down into the desired range. I've got a little room down in my basement that is full of junk right now. I think I am going to clean it out and turn it in to a brew room. At least, a brew room for fermenting and storing my crap. It's not really big enough for me to actually do much in but would hold a fridge and/or freezer and a ton of supplies.RedIs4Heart;887100 wrote:Justin,

Sweet, a brew room is the way to go. Keep you eye on your temps and be patient and this will be the best beer you ever had. Keep us updated.

The idea is to cool your wort down as fast as possible then pitch the yeast and put the air lock on. You really need to maintain a constant temperature. Just ordered two more beer kits. A pumpkin ale and raspberry wheat. I'll brew the pumpkin ale immediately so it's ready for Thanksgiving. The raspberry wheat will then be brewed and put back for the beginning of next summer.

Just bottled my first batch. Ended up with 49 12oz bottles.
I've got plans to start two batches up next week, a batch of pumpkin ale and a batch of apfelwine.

^^^I'll give you this advice...I'd wait till you are much more experienced before you try to do a pumpkin ale. A little spice goes a long way...and individual tastes vary. It's a lot of work to brew a batch that you might not like....and quite disappointing. You can follow a recipe to a tee, and the stuff may still suck.
