My standards for a really good beer with good body, rich full taste and all of the other requirements that have been mentioned by many of you that are far more educated about the finer points of beer than I will ever be, are really quite simple.
European style......room temperature......Disgustingly unacceptable. Rating 0. (rating scale 1-5, with one being just short of squirrel vomit)
just barely cool.....See above rating. ("0")
ice cold...............Keep bringing them (5)

But I probably have about the same items as Justin. I'm picking up a wort chiller and another carboy here pretty soon. Chiller should help with the clarity and an additional carboy will give me enough to have another batch in secondary at the same time.
Right now my milk stouts are still getting to where I want them to be. They've been in bottles for about 2.5 weeks and they'll be much better at around 4 weeks or so and even more so after that.
I'm switching my double chocolate stout to secondary today.

I forgot about this but my wife reminded me about it last night. We were sitting at the bar on Saturday night and some chick came up beside me and ordered a Bud Light. I gave her some major shit for it and after she walked away kept talking about her even though she only moved from beside me to behind me. My wife is pretty sure I offended her pretty bad.
"How the fuck are you going to order Bud Light when they have Christmas Ale on tap? What's wrong with you?"
