Homebrewing was a lot of fun. I did it with a buddy and we drank a bunch of beers while doing it. This Thursday marks week 2 of 3 we're waiting since bottling ours. Looking forward to next Thursday to bust on of them out and give it a shot.

Just to echo Justin, SANITIZE!. Buddy I did the brewing with, couldn't stress this enough. In proper sanitation can ruin a whole batch.

My pumpkin ale should be ready to transfer to the secondary fermenter this week. Two weeks in there and three weeks in the bottle, should be ready right before Halloween.

I know some of you do as well, it seems like it's a good few hours on a weekend day to make a batch, then another few hours a few weeks later to fill the bottles. What pitfalls should I expect to encounter? What are some things you wish you knew before you went into homebrewing?
Washing and bottling 48 bottles by hand is a bitch so last year I got 24 bombers and made things so much easier.

I got this kit from midwest supplies http://www.midwestsupplies.com/brewing-basics-plus-kit.html

My only bottling experience is bombers, and doing 19 of those was a pain. We're looking into bottling into a keg for our next brew.

Would not growlers make more sense to bottle into?

Most people brew 5 gal batches so if you actually have 10 growlers on hand I guess you could. But it has to spend some time in the bottle before you can open it, and you most likely won't be downing one a day and to my knowledge beer in growlers should be drank relatively soon.

As I recall, growlers should be drank within a couple days of filling.

It was likely because it was filled via tap and it can get oxidized, even if it isn't opened. He said a week, tops. Most of what I've read since confirms that.

My understanding as well.

Just opened up my Black Metal that's been sitting in my cellar. Needless to say its awesome. Will have to pick up from this brewery again. Deep intense chocolate flavor, smooth and subtle alcohol taste. Could easily get hammered with this on tap. Great RIS.

Had my first Nosferatu last night. Pretty good, really similar profile to most other GL beers (malty start, bitter finish). It grew on me after the first few sips. I'd be interested in trying it at the brewery, I imagine it's quite different than drinking from a bottle.

I was disappointed with their snake bite. Since its highly thought of, I wonder if I had an older batch. Agreed overall though, great brewery.

Thanks I will need to find those. The InHeatWheat is average, the OldScratchAmberAle is slightly above average.

They're both IPAs (RB is a Belgian one), so if that's not your thing, you don't have to, but if you like IPAs, I'd definitely give them a try.

Dig it! Dogfish Head's "punkin ale" is great stuff. Curious if you also use cinnamon, allspice and brown sugar?
