Love Pumpkin seeds….we carve up 5 or 6 pumpkins and save the seeds
Make our own seeds; Clean and soak in salt water 24 hours, heat over to 350, spread out the seed on a cookie sheet and start baking add sea salt each time we flip them… Plain and simple…

I LOVE roasted pumpkin seeds. Haven't actually done it in forever thought. Might have to get a pumpkin or 2 this year just for the seeds.

I love the ones I make. Although I rarely get to eat any of them, they are usually gone by the time I get to them.
I take the seeds from the pumpkins the kids cut their Jack o lanterns from rinse them very well in a strainer. Soak them overnight in salt water in the refrigerator then spread them on paper towels to dry for the next day. Then I roast them in the oven at around 300 degrees until they are light brown and crispy usually turning them once.

I love pumpkin seeds too (or squash seeds this time of year as well). I do basically the same as the OP, but often will sprinkle them with garlic salt, smoked paprika, or chili powder for added flavor.
