It might be a lot of work for someone but once all teams have designated pickers.....have each picker list a top 15 or 20 players for their team to draft and pm it to someone to do the draft.....if the top 7 were taken, then 8th on the list would be your choice. Each picker would just have to have enough sense to not list 20 of the top 75 or so. You'd go 4 or 5 in each round that figure to be there.

Though....simply having your possible picks ready and just taking 2 minutes 3 times a day to see where the heck we are at would be more interesting/fun.
