What is the official definition of the infield fly? It seems absurd that a ball hit that far into the outfield could possibly be considered an infield fly.

It was a ball that could be handled by the SS with ordinary effort, and as soon as he determined that(when he was under the ball and calling it) he called it. The lateness of the call was warranted until the ump was sure it could be handled with ordinary effort.

Wrong a infield fly is to be called right away. You don't wait until the fielder gets under the ball to call it.

That's what happen when you try to go yard on 2 straight pitches. A base hit could have tied the game.
