An idea I spun off the trilogy thead: What movies in your opinion were better than the original?* I stand by the fact the original is usually always better, but here are a couple exceptions IMO:
Star Wars: The Empire Strikes Back was better than Stars Wars: A New Hope
Star Trek II: The Wrath of Khan was better than the original
I think Friday the 13th Parts 2 and 3 where better than the original
* This does not include remakes, which is a whole different ball of wax IMHO.

Dark Knight definitely heads the list
The two Hangover movies basically had the same plot, but I think I kind of thought the 2nd was funnier. I think most would have a different opinion of part 2 if it came out first

Back to the Future II
Pirates of the Caribbean 2 (I think it was better, at least)
And if we're are just going off of sequels that were better than the original, than also:
Star Trek III
Star Trek IV
Star Trek VI
Star Trek VIII
of course, I don't know that many people who like the Motion Picture (I do), so probably you could argue all the following Star Trek movies were better.

LOTR: Return of the King is better than both of the first two movies.

I actually preferred Back To The Future Part III over both I and II.
Empire was the best of all the Star Wars movies.

The bourne ultimatum was the best movie off the three. All three of them are sweet though

I agree with the OP about Friday the 13th. The original didn't have Jason (except for a dream-style cameo at the end) and the killer wasn't even introduced as a character until the very end. A couple of the sequels were at least entertaining dumb fun that didn't fall into self-parody.
Dawn of the Dead was better than Night of the Living Dead. In a way, I even like Day of the Dead better. Nothing against Night, but the special effects were pretty lame with the zombies looking way too "normal" compared to the other two.
I might put the second Hellraiser above the first. It had this surreal nightmarish vibe to it which I dug. After that one, the series went to hell, though, as Pinhead got turned into "generic horror villain #394" and the only appeal really was seeing what kind of Cenobites he created this time.
