Instead of Christmas dinner this year we are planning on having Christmas Brunch at our house. I'm looking for a few ideas on what to serve.

I have a recipe for a crock pot breakfast casserole (you can just google it, there are about a million of them and they're all basically the same). Very easy. Do a fruit salad and some biscuts and bananna bread.

Christmas brunch is the best. That's all my Dad's family does every year for Christmas.

As of now I think I going with the following unless someone can persuade me otherwise

Berry Salad
Cinnamon Rolls
Pecan Rolls
French Toast
Blueberry or Chocolate Chip Pancakes
Scrambled Eggs
Breakfast Pizza
Mimosas
OJ
Milk

IMO it is easier to make the casseroles than making the French Toast Pancakes and Eggs in mass and keeping them warm. I think its more work and harder to pull off but if you can go for it, good menu.

The casseroles do make it nice. Everything can be done ahead of time so you're not stuck in the kitchen.

No traditional dinner here, either. We have a get together on Christmas night and I think this year we're serving pulled pork and shredded beef sammiches, cheesy taters, spicy nacho dip, cheese and veggie tray, cookies, candy and most importantly...beer and vodka.

We used to do a big dinner on Christmas Eve and Christmas Day, but it's hard to get everyone together at one time these days, so we usually just make appetizers and people eat as they come and go.

We have a Christmas Dinner but the day after Christmas everyone still come over and we do a lunch type spread:

Meat / Cheese Tray (ones we did small egg salad and ham salad sandwiches..pain in the ass to make)
Smoked Salmon
Buns, Croissants and Bagels
Potatoes salad or Macaroni salad
Large pickle, olive and veg. tray
Chip and some dip

Later that evening if everyone is planning to stay ..they we plan on everyone bring some type of a appetizer to help add to the lunch spread… This work out good because those that don’t come for the lunch will bring something for the evening that everyone else can enjoy….

I'm now tossing around the idea of a french toast casserole instead of regular french toast. Any tried and true recipes that you have used?

In my humble opinion, I think you have too many "bready" type items with the rolls, french toast and pancakes. I'd eleminate the pancakes and pizza and go with an egg strada.

While I tend to agree with you there is a reason for most of the items on the list.
I like the berry salad. My brother likes the cinnamon rolls, my dad likes the pecan rolls, my daughter likes the french toast, my sisters like the pancakes, my wife likes the breakfast pizza, and everyone likes the mimosas.

One word...HAM!

We actually do a Christmas breakfast with my Mother and Father on Christmas morning. It usually consists of Scrambled eggs, Toast, fried potatoes and sausage gravy. I look forward to that meal every year! I usually slap everything on one plate, throw some shredded cheese and some hot pepper rings on top and I'm full til Christmas dinner!

We usually do brunch but since the kids won't be around til later in the day, we are having crown roast of pork with cornbread stuffing. Thank you Paula Deen.

Blueberry Stuffed French Toast

12 slices French bread, cut into 1-inch cubes
2 8-oz pkgs cream cheese, chilled, and cut into 1-inch cubes (I use neufchatel cheese)
1 C fresh blueberries, rinsed and drained (can use frozen)
12 large eggs (I use 1/2 egg sub and 1/2 eggs)
1/3 C maple syrup

1 C fresh blueberries, rinsed and drained (can use frozen)
1 TB unsalted butter


Grease a 13x9-inch baking pan. Place 1/2 the bread cubes evenly in prepared pan. Scatter cream cheese over bread and sprinkle with 1 C blueberries. Arrange remaining bread cubes over blueberries. In a large bowl combine eggs, syrup, and milk. Whisk to blend. Pour over bread mixture. Cover with foil and refrigerate overnight.

Preheat oven to 350 degrees. Bake, covered with foil, in middle of oven 30 minutes. Remove foil and continue baking 30 minutes, or until puffed and golden brown.

In a small saucepan combine sugar, cornstarch, and water over medium-high heat. Cook, stirring occasionally, 5 minutes or until thickened. Stir in 1 C blueberries and simmer, stirring occasionally 10 minutes, or until most berries burst. Add butter and stir until melted (may be prepared up to 1 day in advance. Chill and reheat gently).

Serve the syrup with the french toast, or top the french toast with syrup while still in the pan
