I have not had much face time with Southern Beavers so I don't have an expert opinion on them.

My experience with European beavers however is much more extensive. From my basic probing knowledge I know European beavers tend to have a thicker coat than their American counterparts. They also tend to not be as concerned with overall hygiene. For instance, if you watch American beavers closely, after a time, they will take a dam break and begin rigorously grooming themselves in hopes of making the best impression possible on the next drifter that comes along and pays attention to them.

You will not find this in European beavers. European beavers, on the other hand, seem to offer more of a "I am what I am...take it or leave it" approach, no matter the smell or appearance.

By the way, this may explain many a Frenchmen's blase attitude towards the beaver in general.

When a beaver gets too big the meat takes on a gamey taste. I much prefer to eat smaller beavers.
