I can’t get the pic to upload but I did a brisket Yesterday in a completely different way and it turned out great. I usually just do 225 and let it go till it’s done. Occasionally I will wrap in foil or butcher paper if necessary.
This time I cooked it at 325 for 2 hours till the temp hit 141. Then put it on a baking rack in an aluminum pan covered in foil for 2 hours when the temp reached 203 in the thickest part.
Then I separated the point from the flat and put the flat in a cooler to rest. I put the point back on for about 1:30 min at 225 for the burnt ends.
Basically the cook lasted about 5.5 hours compared to my normal 12-15 hour cook.
The pros were that the brisket was the most tender and most juicy that I’ve ever made.
Cons it had less bark and less smoke.
I think next time I am going to try to put it on the smoker at 225 and then put it in a pan when it reaches 141 and turn it up to 325 to kind of do a combination of both methods.

I also had some ricotta that was about to go bad, so I made lasagna roll ups and they were great. The bonus: wayyy less work than my traditional lasagna.
I'm going to make Disney's grilled cheese sometime in the next few days.

Wife made banana bread the other night and it was awesome. I'm going to have her try this recipe because coconut is the GOAT.
4 egg omelette this morning:
- Bacon
- Fresno Pepper
- Spinach
- Tomato
- Onion
- Cheese
It was tremendous.

Did my first tomahawk ribeye yesterday. Smoked it at 225° for about an hour and a half until an internal temp of 120°. Then reverse seared it about 3 minutes a side. Turned out amazing. It was about 3" thick.
Made mozzarella stuffed meatballs with some extra ground beef and pork I needed to use. They were v good.
Made two batches of these Rice Krispies Treats and they're the best I've had. I'm on a no-bake dessert kick due to laziness.

Did a spur-of-the-moment tri-tip on the smoker last weekend ....not too shabby. Also smoked some trout filets and made a fantastic dip.
I've rediscovered eggo waffles with butter and syrup. Good lord those are good!
Made jalapeño poppers for the 4th with the peppers I’ve been growing all year. Probably a little early to have picked them, but oh well. Tasty af. Plant has about 50 fruits growing, plus more buds.
