Do your own Jerky

Anyone from the OC makes their own Beef Jerky?

I have this old style wood Smoker and I been thinking about making some Beef Jerky.

What I have read so far, is that Smoking the beef in a Smoker for about three hours is a good thing and will add a good smoke flavor to the jerky. But to really make an old fashion Smoke Beef Jerky requires about 72 hours of slow smoking.

Those of you who make Beef Jerky what are your methods?

I make deer jerky but always used a dehydrator. It usually takes over night for it and i usually rotate the trays at least once.

I make my deer jerky as well. Have a strip gun I use. Cure the meat overnight with some mix from Cabela's..really wish I could remember it. Then I use the gun to lay strips out on pans. Cook in the oven at 200 degrees(I think) for 1 1/2 hrs, then flip for another hour and a half. Turns out very good.

Haven't made it in a whle, but when I did I used a dehydrator. I'd marinate the meat with liquid smoke and Jack Daniels overnite....mix in a litle BBQ sauce and dehydrate as McBurg. Mine usually took 1 1/2 -2 days

My dad uses a dehydrator and makes some damn good jerky. I'm not quite sure what he does, but he does it for a while I know that.

My favorite is the Frank's Red Hot flavor, but he makes teriyaki, caribbean jerk, and a couple other flavors that range from mild/tangy to hot as balls.

My old dehydrator took a few days. I got this new one and its done in about 12-18 hrs

I generally like the Asian slant eyed chick at the spa to do my jerking but sometimes I do my own.
