The quote is erroneous. Why would one protect themselves from happiness? How would one protect themselves from sadness?

It means that you're not quite drunk enough. You have to go from being able to taste food, to not tasting it to coming full-circle and tasting it again...just really inaccurately, so that you think you're eating foam or something.
