It's some good shit Maynard !!! My Grandma makes it year round. She'll puree and freeze extra zucchini so she can make it in the winter.

Wife made two dif type of versions yesterday. The regular...very good. The other she said was unsweetened. I dont know if that was intended or not but man, that stuff was complete garbagel

not zucchini bread...but try "stuffed zucchini"....made the same as stuffed peppers....
just split the zucchini long ways, de-seed.....put the rice/ground beef mixture in the zucchini "boat" cover with pasta sauce....top with cheese when done
