They do live a hard life, but it's one they choose to live. To me, that's like eulogizing a thug or hustler because of the life they lead. It's sad news to hear, sure, but let's not make it out like they're forced into this line of work.

How do you react to the death of a soldier? Or a policeman killed in the line of duty?

If you honor them it makes you a hypocrite by your own standards....they chose that line of work, right?

This guy died of natural causes in a hotel room. Unless he was banging a prostitute not much crabbing going on so how is his death in the line of duty?

No. Sure they are choosing that profession, but by doing so they sacrifice their own safety to provide that safety for civilians. That's not the same thing as going to Alaska on a crab boat hoping to make 100k in a season by catching seafood. If you can't see that, I can't explain it to you any further.
