Taking about 10 of us to the Big Easy for my buddies Bachelor party in the middle of May.......what do we need to do/see besides drink plenty?

That is pretty much it other than doing an architecture tour or heading to Mississippi for gambling.
The French Quarter is good for a lot of drinking and a lot of eating. My wife was born in Metairie and lived in the Garden District until her parents divorced. So we've spent some quality time there. I remember some of it.
Tropical Isle and Razzoo's were our favorite places.

We love the "French Quarter Bar" at the Ritz Carlton on Canal Street.
Jazz music with singing.
For some true local flavor check out Sweet Lorraine's Jazz Club. You have to go out to St. Claude Avenue.

You can go from fun to seedy real fast in the FQ. Be careful where you are going.

i go there all the time for work and I've never been anywhere in the quarter for any of the night life (though for a concert I did go to the House Of Blues, but it's like the edge of FQ). If you're into it there is a store down there called the cigar factory on bourbon. they make some badass cigars.
there's also an awesome restaurant on St. Charles called Luke it's very nice.

Hit the 3-for-1 Happy Hours on Bourbon.
Check out the Rum Distillery - I think they are offering free shuttles from the FQ now.
There is a Harrah's Casino on Canal if you want to gamble.
Looking for good live music? Hit Frenchmen Street.
Cat's Meow is a karaoke bar but few people realize that they can get on the balcony there for free if you want and is usually not too crowded.

Bourbon street is the place you want to spend the most time at. Ricks is the best strip club. Right around the corner is a bar called the Alibi that the girls from Ricks go to after work. Great place with a good selection of micro beers. Take the trolley down St Charles and walk around the garden district in the afternoon. After you seen enough go to a bar called the Bulldog. Great place and dog friendly. Also check out the bar at the hotel Monteloenoe carousel bar. Acme Oyster great place to eat. Go to the Crescent City Brewhouse and have lunch and drink a Black Forest for me.
